What Sri Lankan breakfast actually looks like

Hoppers, dhal, coconut sambol—and always one more plate.

What Sri Lankan breakfast actually looks like

A Sri Lankan breakfast is built from contrasts: crisp hopper edges and soft centres, mild coconut gravy and bright sambol, warm dhal and sharp lime.

String hoppers arrive as delicate nests. Tear, mix and use them to gather curry. There is no prize for keeping the plate tidy.

The best breakfasts are rarely rushed. Ask what is homemade, taste the sambol cautiously, and accept the second cup of tea.

Hoppers and egg hoppers

Hoppers, or appa, are bowl-shaped pancakes made from a lightly fermented rice-flour and coconut-milk batter, cooked in a small curved pan. The edges turn lacy and crisp while the centre stays soft. An egg hopper has an egg cracked into the middle as it cooks.

Eat them with lunu miris, a fiery onion and chilli relish, or tear them into dhal and coconut sambol.

String hoppers, pol roti and kiribath

String hoppers, or idiyappam, are steamed nests of rice-flour noodles served with dhal, a mild coconut-milk gravy called kiri hodi and a potato or fish curry. Pol roti is a dense flatbread made with fresh grated coconut, often eaten with lunu miris and tea.

Kiribath, rice cooked in coconut milk and cut into diamonds, is made for celebrations, the Sinhala and Tamil New Year in April and the first day of the month in many homes.

What to drink

Ceylon tea is the default, usually strong and sweet with milk. In the hills, ask to taste a plain high-grown tea from a nearby estate. On the coast, king coconut water, sold whole from roadside stalls, is the best way to start a hot morning.

Where to eat a real Sri Lankan breakfast

Most hotels serve a Western buffet unless you ask, so request the Sri Lankan breakfast the night before. Family-run guesthouses usually cook the best version. Small local eateries, often called hotels, serve string hoppers and hoppers early in the morning and again in the evening.

Vegetarians eat very well: dhal, coconut sambol, vegetable curries and fresh tropical fruit such as papaya, pineapple, mango and rambutan are part of almost every breakfast.
